


Raspberry Chia Chocy Slice

This is a multi-layer “decadent delight” for that special occasion. This slice is rich, fruity and very satisfying. Made with wonderful natural whole foods including “good plant fats “nuts, seeds, coconut oil and of course avocado. Together with antioxidant rich superfoods like chia seeds, raspberries’ and cocoa powder and sweetened naturally with coconut nectar, agave and fruit.
Directions
Method Base
1Using a food processor Blend nuts into a coarse flour.
2Mix in cacao and cocoa and sea salt and set aside.
3Then blend dates add avocado and vanilla.
4Lastly add back nuts to mixture and pulse.
5Line a square slice tin and press mixture into the tin.
Method Coconut Filling
1Blend nuts and coconut in a blender until finely processed add agave and salt and continue to process until mixed thoroughly.
2Melt coconut oil then slowly add to processed nut mixture probably best to use pulse setting on processors/blenders. Overmixing coconut oil can cause mixture to separate when cooling.
3Add to chocolate base and refriderate.
4Spread Chia jam mixture over the top.
Method Choco Top
1Heat cacao butter at a low heat until liquid.
2 Take off heat and add remaining ingredients. Mix thoroughly and gently by hand. Do not overheat or mix as oil can separate.
3Spread immediately on slice and refriderate. This slice can last up to 5 days in fridge.

Chia Jam
1This is best prepared the day before simply mix/blend the following ingredients and refrigerate. (2 cups frozen berries (thawed) 3 tbsp chia seeds).
