Mandarin Coconut Balls of Bliss

2 cups of shredded coconut

1/3 coconut oil (liquid form)

1 cup almonds

1 tbsp of honey

pinch of salt

8 freeze dried mandarin segments

zest of 1 mandarin/orange

2 tbsp of mandarin/orange juice


1Place all ingredients in a food processor until well combined & sticky.

2With wet hands roll mixture into balls.

3Store immediately in fridge, you can freeze this recipe.

4You can substitute ¼-cup of freeze dried berries for mandarin segments. Lemon juice can be substituted for orange juice. I also add ½ cup of dried cranberries to this option.
